Method

Prepare the Braised Beef

    Sear and Braise

    Heat olive oil in a large pot over medium-high heat. Season the beef with salt and black pepper, then sear on all sides until browned. Remove and set aside.

    Sauté Vegetables

    In the same pot, add chopped onion, carrots, and minced garlic. Sauté until softened.

    Add Liquid and Braise

    Return the beef to the pot, add beef broth, red wine, thyme, and bay leaf. Bring to a simmer, cover, and cook on low heat for 2-3 hours or until the beef is tender.

    Shred the Beef

    Once cooked, remove the beef and shred it using two forks. Return the shredded beef to the pot and mix with the sauce.

Make the Profiteroles

    Prepare Choux Pastry

    Preheat the oven to 400°F (200°C). In a saucepan, bring water, butter, and salt to a boil. Stir in flour until a dough forms. Remove from heat and let cool slightly.

    Add Eggs

    Beat in eggs one at a time until smooth and glossy.

    Pipe and Bake

    Pipe small rounds onto a baking sheet. Bake for 20-25 minutes or until golden and puffed. Let cool.

Prepare Chevre Cheese Mixture

    Mix Ingredients

    In a bowl, combine chevre cheese, heavy cream, chopped chives, and salt. Mix until smooth.

Assemble the Dish

    Fill Profiteroles

    Cut the top off each profiterole and fill with shredded braised beef and a dollop of the chevre mixture. Replace the tops and serve.
