    Make the Pasta Dough

    On a clean surface, make a mound with the flour and create a well in the center. Crack the eggs into the well, add salt, and slowly incorporate the flour using a fork until a dough forms.

    Knead the Dough

    Knead the dough for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Roll and Cut the Pasta

    After resting, roll out the dough using a pasta machine or a rolling pin until thin. Cut into your desired shape (tagliatelle, fettuccine, etc.).

Lapin sauce

    Sear the Rabbit

    In a large pot, heat olive oil over medium heat. Add rabbit pieces and sear on all sides until golden brown. Remove and set aside.

    Sauté Vegetables

    In the same pot, add garlic, onion, carrot, and celery. Sauté for about 5 minutes until the vegetables are soft.

    Deglaze and Simmer

    Pour in red wine and scrape the bottom of the pot to deglaze. Add chicken broth, thyme, bay leaf, and the seared rabbit. Bring to a simmer, cover, and cook for about 1 hour or until the rabbit is tender.

    Season and Serve

    Remove the rabbit, shred the meat, and return it to the sauce. Season with salt and black pepper to taste. Serve over the freshly made pasta.
