    Boil the diced potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.

    Add butter and milk to the potatoes and mash until smooth. Season with salt, pepper, and nutmeg to taste.

    In a skillet, heat a little butter and cook the boudin noir over medium heat until browned on all sides, about 5-7 minutes. Remove from the pan and slice.

    In the same skillet, add the diced pears and sauté until soft and slightly caramelized, about 5 minutes.
