Prepare the Duck
Score the skin of the duck breasts in a crisscross pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

Sear the Duck
In a cold skillet, place the duck breasts skin-side down. Turn the heat to medium and allow the fat to render and the skin to become crispy, about 6-8 minutes. Once the skin is golden brown, flip the duck breasts.

Finish Cooking
Transfer the skillet to a preheated oven at 400°F (200°C) and roast the duck for about 8-10 minutes for medium-rare, or until desired doneness.

Rest the Duck
Remove the duck from the oven and let it rest for 5 minutes before slicing.

Slice the duck breasts, drizzle with balsamic vinegar, and serve with your choice of sides.
