Prepare the Cream
In a medium saucepan, combine the heavy cream and the vanilla bean (split and scraped). Heat over medium heat until just below boiling. Remove from heat and let steep for 15 minutes.

Mix Egg Yolks
In a separate bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture is pale and thick.

Combine Mixtures
Slowly pour the warm cream into the egg yolk mixture, whisking constantly to prevent curdling. Strain the mixture through a fine sieve to remove any solids.

Chill
Remove the ramekins from the water bath and let them cool to room temperature. Cover with plastic wrap and refrigerate for at least 2 hours or overnight.

Caramelize the Sugar
Before serving, sprinkle the top of each custard with a thin layer of brown sugar. Using a kitchen torch, caramelize the sugar until it is golden and bubbling. Alternatively, you can place the ramekins under a broiler for a few minutes.

Serve
Allow the crème brûlée to sit for a minute after caramelizing the sugar, then serve immediately.
