    Sauté the Aromatics

    In a large pot, heat 1 tablespoon of olive oil and 2 tablespoons of butter over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.

    Cook the Mushrooms

    Add the 500 grams of chopped mushrooms to the pot. Continue to cook, stirring occasionally, until the mushrooms have released their moisture and are browned, about 8-10 minutes.

    Add Broth and Seasonings

    Pour in 4 cups of vegetable broth. Add 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of thyme. Bring the mixture to a boil, then reduce the heat to low and simmer for 15 minutes.

Blending and Finishing

    Blend the Soup

    Using an immersion blender, carefully blend the soup until smooth. If you do not have an immersion blender, you can transfer the soup in batches to a countertop blender. Be cautious with the hot liquid.

    Add Cream

    Stir in 1 cup of heavy cream into the blended soup. Heat gently over low heat until warmed through. Do not bring to a boil.

    Prepare Garnish

    In a small pan, sauté the additional 100 grams of sliced mushrooms in a bit of butter until golden brown. Chop the fresh parsley.

    Serve

    Ladle the hot mushroom soup into bowls and top with sautéed mushrooms and chopped parsley. Enjoy your creamy mushroom soup!
