Prepare the Duck Filling

Cook the Duck
In a medium skillet over medium heat, place the duck breasts skin-side down. Cook for 6-8 minutes until the skin is crispy and golden. Flip and cook for another 4-5 minutes until the meat is medium rare. Remove from heat and let rest.

Shred the Duck
Once the duck has cooled slightly, shred the meat with two forks, discarding the skin. In a bowl, mix the shredded duck with soy sauce, minced garlic, grated ginger, carrot, cabbage, green onions, and sesame oil. Set aside.
Assemble Spring Rolls

Prepare the Wrappers
Lay one spring roll wrapper on a clean surface with one point facing you. Place about 2-3 tablespoons of the duck filling in the center of the wrapper.

Fold the bottom point over the filling, then fold the sides in, and roll tightly away from you to form a spring roll. Repeat with remaining wrappers and filling.

Carefully place a few spring rolls into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

In a small bowl, whisk together soy sauce, rice vinegar, honey, and chili flakes until well combined. Set aside.
