Preparation

    Preheat the oven

    Preheat your oven to 200°C (392°F). Grease four ramekins with butter and dust them with cocoa powder or flour to prevent sticking.

    Melt chocolate and butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let it cool slightly.

    Mix sugar and eggs

    In a separate bowl, whisk together the granulated sugar and eggs until light and fluffy. You can use a hand whisk or an electric mixer for about 3-5 minutes.

    Combine mixtures

    Pour the melted chocolate and butter mixture into the egg and sugar mixture. Add vanilla extract and a pinch of salt. Gently fold until combined.

    Add flour

    Sift in the all-purpose flour and fold gently until just combined. Be careful not to overmix.

    Fill ramekins

    Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

    Bake

    Bake in the preheated oven for 10-12 minutes or until the edges are firm but the center is still soft.

Serving

    Cool slightly

    Remove the fondants from the oven and let them cool in the ramekins for about 1 minute.

    Unmold

    Carefully run a knife around the edges of each ramekin to loosen the fondants. Invert onto plates and gently lift the ramekins off.

    Dust with powdered sugar, and serve warm with a scoop of vanilla ice cream and fresh berries on the side.
