Mousse Preparation

Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.

Whisk the Egg Yolks
Add the granulated sugar to the egg yolks and whisk together until pale and creamy. Stir in the melted chocolate and vanilla extract until well combined.

Fold in the Egg Whites
Gently fold the beaten egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

Whip the Cream
In another bowl, whip the 300 ml of heavy cream until soft peaks form. Then fold the whipped cream into the chocolate mixture until no white streaks remain.

Chill the Mousse
Divide the mousse mixture into individual serving cups and refrigerate for at least 2 hours, or until set.

Whip the Cream
In a chilled bowl, whip the 150 ml of heavy cream with powdered sugar and vanilla extract until soft peaks form.

Serve the Mousse
Once the mousse is set, top each serving with a dollop of whipped cream before serving.
