Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Coating
In a large bowl, combine the flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.

Soak in Buttermilk
Pour the buttermilk over the calamari rings and let them soak for about 30 minutes.

Coat the Calamari
After soaking, drain the calamari and coat each ring in the flour mixture evenly.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, frying until golden brown, about 2-3 minutes per batch.

Drain and Serve
Remove the fried calamari with a slotted spoon and drain on paper towels. Serve hot.

Sauté the Garlic
Add the minced garlic to the hot oil and sauté for about 1 minute until fragrant.

Add the Tomatoes
Stir in the crushed tomatoes, oregano, basil, salt, black pepper, and sugar.

Simmer the Sauce
Bring the sauce to a simmer and let it cook for about 15-20 minutes, stirring occasionally.

Serve with Calamari
Once the sauce is ready, serve it warm alongside the fried calamari.
