Method
Battered Cod

Prepare the Batter
In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the beer (or sparkling water) while whisking until the batter is smooth and thick.

Heat the Oil
In a large, deep skillet or fryer, heat vegetable oil to 350°F (175°C).

Batter the Cod
Dip each cod fillet into the batter, ensuring it is fully coated.

Fry the Cod
Carefully place the battered cod into the hot oil. Fry for about 4-5 minutes, or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Potatoes
Peel and cut the potatoes into thin strips. Soak them in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).

Fry the Potatoes
Fry the potato strips in batches for about 3-5 minutes until golden brown. Remove and drain on paper towels, then season with salt.

Mix the Dressing
In a bowl, combine mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Mix well.

Combine and Chill
Add the shredded cabbage and carrots to the dressing and mix until well coated. Refrigerate for at least 30 minutes before serving.

Activate the Yeast
In a small bowl, dissolve the sugar in warm milk and sprinkle the yeast over the top. Let it sit for about 5-10 minutes until frothy.

Mix the Dough
In a large bowl, combine the flour and salt. Add the yeast mixture, melted butter, and egg. Mix until a dough forms.

Knead and Rise
Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.

Preheat the oven to 375°F (190°C). Punch down the dough, shape into rolls, and place on a baking sheet. Let rise again for 30 minutes, then bake for 12-15 minutes until golden.
Tartar Sauce

In a small bowl, combine mayonnaise, dill pickles, lemon juice, and capers (if using). Stir until well mixed.

Refrigerate the tartar sauce for at least 15 minutes before serving to allow the flavors to meld.
