Mix Dry Ingredients
In a large mixing bowl, sift together the all-purpose flour, granulated sugar, baking powder, baking soda, ground cinnamon, salt, and ground nutmeg until well combined.

Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Do not overmix.

If using, fold in the chopped walnuts or pecans and raisins into the batter.
Bake the Cake

Prepare Baking Pan
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Pour Batter
Divide the batter evenly between the prepared cake pans.

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Cool Cakes
Once baked, remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, transfer the cakes to a wire rack to cool completely.

Make Frosting
In a medium bowl, beat the cream cheese and softened butter together until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined and fluffy.
Assemble the Cake

Frost the Cake
Once the cakes are completely cool, place one layer on a serving plate and spread a layer of cream cheese frosting on top. Place the second layer on top and frost the top and sides of the cake.
