Method
Preparation of Pulled Pork
Cook the Pork
In a slow cooker, combine the pork shoulder, onion powder, garlic powder, salt, black pepper, and BBQ sauce. Cook on low for 8 hours or until the pork is tender and easily shreds.
Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix it with the remaining BBQ sauce.

Fry the Potatoes
Heat the vegetable oil in a deep fryer or large pot. Fry the frozen French fries according to package instructions until golden brown and crispy.
Assembling the Poutine
Layer the Ingredients
On a serving plate, layer crispy fries, followed by cheese curds, and generous amounts of pulled pork. Drizzle with gravy.
Prepare the Kale Slaw
In a bowl, combine chopped kale, apple cider vinegar, honey, salt, and pepper. Toss to coat.
Finish the Dish
Top the layered poutine with the kale slaw and sprinkle hickory sticks on top for crunch.
