Prepare the Waffles

In a mixing bowl, combine waffle mix, water, and vegetable oil. Cook in a preheated waffle maker according to the manufacturer's instructions. Set aside.

Make the Chicken Fingers

Set up a breading station with flour, beaten eggs, and breadcrumbs. Season flour with salt and pepper. Dip chicken tenders in flour, then egg, and finally breadcrumbs. Fry in hot oil until golden brown and cooked through. Toss with maple syrup and set aside.

Make the Gravy

In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually add chicken broth while whisking until smooth and thickened. Season with salt and pepper.

Prepare the Fries

Cook frozen french fries according to package instructions until crispy.

Assemble the Poutine

On a serving plate, layer the crispy fries, then add cheese curds, followed by the cooked waffles. Pour hot gravy over the top, then add the maple bacon chicken fingers. Finish with additional crumbled bacon and a drizzle of maple syrup.
