Prepare the Fries

In a deep fryer or large pot, heat vegetable oil to 350°F (175°C). Fry the frozen French fries according to package instructions until golden brown and crispy. Drain on paper towels and season with salt.

Make the Mac & Cheese

In a pot, cook macaroni according to package instructions. In another pot, melt butter over medium heat. Stir in flour and cook for 1-2 minutes. Gradually add milk while whisking until smooth. Add cheddar cheese, salt, and pepper, stirring until melted and creamy. Mix in cooked macaroni.

Prepare the Brisket

In a saucepan, heat the shredded smoked brisket over medium heat, stirring in the honey BBQ sauce until warmed through.

Assemble the Poutine

On a plate, layer the crispy fries, followed by a generous amount of mac & cheese. Top with shredded brisket, cheese curds, and crispy fried onions. Drizzle with coleslaw dressing and additional honey BBQ sauce. Serve immediately.
