White wine & lemon poached, Wild Gulf Shrimp, zesty cocktail sauce

In a large pot, combine white wine, lemon juice, water, and a pinch of salt. Bring to a simmer over medium heat. Add the Wild Gulf Shrimp and poach for about 3-4 minutes or until they turn pink and opaque. Remove the shrimp from the pot and place them in an ice bath to stop the cooking process. Drain and set aside.

Prepare the Shrimp

In a bowl, combine ketchup, horseradish, lemon zest, Worcestershire sauce, hot sauce, and salt and pepper to taste. Mix well until smooth.

Make the Cocktail Sauce

Arrange the poached shrimp on a serving platter and serve chilled with the zesty cocktail sauce on the side.
