Season the pork chops with salt and black pepper. Drizzle olive oil over them and let them marinate for at least 30 minutes.

In the same skillet with the bacon fat, add the chanterelle mushrooms and sauté until they are golden brown.

In a saucepan, add the sweet corn kernels and a bit of water. Cook on medium heat until tender. Mash slightly to create a creamy texture, then stir in the chopped bacon and sautéed chanterelles.

Prepare Creamed Corn

Preheat the grill to medium-high heat. Grill the pork chops for about 4-5 minutes on each side or until they reach an internal temperature of 145°F (63°C).

Grill the Pork Chops

Plate the grilled pork chops, and top with the creamed corn mixture. Garnish with chopped scallions and pork cracklings for added texture.
