For the Duck Fat French Fries

Method

For the Duck Fat French Fries

  1. 1

    Prepare the Potatoes

Wash and peel the russet potatoes. Cut them into uniform sticks, about 1/4 inch thick.

  2. 2

    Soak the Potatoes

Place the cut potatoes into a bowl of cold water and soak for at least 30 minutes to remove excess starch.

  3. 3

    Preheat Duck Fat

In a large heavy pot, heat the duck fat over medium heat until it reaches 350°F (175°C).

  4. 4

    Dry the Potatoes

Drain the soaked potatoes and pat them dry with paper towels to remove excess moisture.

  5. 5

    Fry the Potatoes

Carefully add the dried potatoes to the hot duck fat in batches, frying for about 5–7 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

  6. 6

    Season the Fries

While still hot, toss the fries with fresh rosemary, thyme, salt, and black pepper.
