Preparing the Filling

Step 1: Prepare the Vegetables
In a large mixing bowl, combine shredded cabbage, grated carrot, chopped bell pepper, chopped green onions, and minced garlic.

Step 2: Flavor the Filling
Add soy sauce, sesame oil, salt, and black pepper to the vegetable mixture. Mix everything well until the vegetables are evenly coated.
Assembling the Spring Rolls

Step 3: Fill the Wrappers
Place a spring roll wrapper on a clean surface with one corner pointing toward you. Spoon about 2 tablespoons of the vegetable filling onto the wrapper.

Step 4: Roll the Wrapper
Fold the bottom corner over the filling, then fold in the sides tightly. Continue rolling until you reach the top corner. Wet the edge of the wrapper with water to seal the roll.

Repeat the filling and rolling process until all the wrappers and filling are used.
Frying the Spring Rolls

Step 6: Heat the Oil
In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Step 7: Fry the Spring Rolls
Carefully add the spring rolls to the hot oil in batches, frying for about 3-4 minutes or until golden brown and crispy. Make sure not to overcrowd the pan.

Once fried, use a slotted spoon to remove the spring rolls and place them on paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
