Method

Preparing the Calamari

  1. 1

    Prepare the Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels.

  2. 2

    Mix Dry Ingredients

In a bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

  3. 3

    Coat the Calamari

Dredge the calamari rings in the flour mixture, ensuring they are well coated.

Cooking the Calamari

  1. 4

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

  2. 5

    Fry the Calamari

Fry the coated calamari in batches for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Making the Marinara Sauce

  1. 6

    Sauté the Garlic

In a saucepan, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

  2. 7

    Add Tomatoes and Seasonings

Add the canned crushed tomatoes, dried oregano, salt, and sugar. Stir well, and let it simmer for 15-20 minutes.

  3. 8

    Finish with Basil

Stir in the chopped fresh basil just before serving.

Making the Lemon Aioli

  1. 9

    Combine the Ingredients

In a bowl, mix together the mayonnaise, lemon juice, minced garlic, salt, and chopped parsley until smooth.
