Cooking Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Once cooked, reserve 1 cup of pasta water and drain the rest.

Preparing Vegetables

    Chop the Vegetables

    While the pasta is cooking, wash and chop the bell peppers, zucchini, carrot, cherry tomatoes, and broccoli into bite-sized pieces.

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped vegetables and sauté for about 5-7 minutes or until they are tender but still crisp. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.

Combining Ingredients

    Mix Everything Together

    Add the drained pasta to the skillet with the sautéed vegetables. Drizzle in the remaining tablespoon of olive oil and toss to combine. If the mixture seems dry, add reserved pasta water a little at a time until you reach the desired consistency.

    Season and Serve

    Season the pasta with black pepper and stir in the grated Parmesan cheese and chopped fresh basil. Serve immediately, garnished with additional cheese and basil if desired.
