Preparation

Prepare the Rice Noodles
Soak the rice noodles in hot water for about 20 minutes, or until they are soft. Drain and set aside.

Prepare the Sauce
In a small bowl, mix together the soy sauce, fish sauce, tamari, brown sugar, and lime juice. Set aside.

Stir-fry the Proteins
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes. Add the shrimp and cook until they turn pink, about 3 minutes. Remove the cooked proteins from the skillet and set aside.

Cook the Vegetables
In the same skillet, add a little more oil if needed, then add the red bell pepper, carrot, and the white parts of the green onions. Stir-fry for about 3-4 minutes until they are tender but still crisp.

Add Noodles and Eggs
Add the drained rice noodles to the skillet with the vegetables. Push the noodles to one side of the skillet, and pour the beaten eggs into the empty side. Scramble the eggs until just set, then mix them with the noodles and vegetables.

Combine Everything
Pour the prepared sauce over the noodles, mixing everything together until the sauce is evenly distributed. Add the cooked shrimp and chicken back into the skillet, along with the bean sprouts and the green parts of the green onions. Toss everything together and cook for an additional 2-3 minutes until heated through.
Serving

Garnish and Serve
Serve the Pad Thai hot, garnished with crushed peanuts, lime wedges, and chopped cilantro. Enjoy!
