Preparing the Chicken

    Marinate the Chicken

    In a large bowl, combine soy sauce, ground coriander, ground cumin, minced garlic, brown sugar, vegetable oil, lime juice, and salt. Mix well until the sugar dissolves. Cut the chicken breasts into strips or cubes and add them to the marinade. Stir to coat the chicken evenly. Cover and refrigerate for at least 1 hour, or overnight for best flavor.

    Prepare Skewers

    If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning. This will help the skewers hold up during the cooking process.

Making the Peanut Sauce

    Combine Sauce Ingredients

    In a medium bowl, whisk together creamy peanut butter, coconut milk, soy sauce, lime juice, brown sugar, red pepper flakes, and water until smooth and well combined. Adjust the consistency with more water if needed, and set aside.

Grilling the Chicken Skewers

    Preheat Grill

    Preheat your grill to medium-high heat. Remove the chicken from the marinade and thread the marinated chicken onto the soaked skewers.

    Grill the Skewers

    Place the chicken skewers on the grill and cook for about 4-5 minutes on each side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

    Remove the skewers from the grill and let them rest for a few minutes. Serve the chicken satay warm with the peanut sauce on the side for dipping.
