Prepare the Filling
In a large bowl, combine the rice, diced tomato, chopped onion, olive oil, salt, black pepper, lemon juice, and chopped parsley. Mix well.

Prepare the Grape Leaves
If using preserved grape leaves, rinse them under cold water to remove excess salt. If using fresh leaves, blanch them in boiling water for 2-3 minutes until tender. Drain and cool.

Assemble the Warak
Place a grape leaf on a flat surface, vein side up. Put about 1 tablespoon of the filling near the stem end of the leaf. Fold the sides over the filling and roll tightly from the stem end to the tip. Repeat with remaining leaves and filling.

Cook the Warak
In a large pot, arrange the stuffed grape leaves seam side down in a single layer. Pour water or vegetable broth over the rolls until they are just covered. Place a plate on top to keep them submerged. Bring to a simmer and cook for about 45 minutes, or until the rice is tender.

Serve
Remove from heat and let cool slightly before serving. Drizzle with additional lemon juice if desired.
