Prepare the Rice

Rinse the long-grain rice under cold water until the water runs clear. This helps to remove excess starch.

Cook the Onions

In a large pot, heat the olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent, about 5 minutes.

Toast the Pine Nuts

Add the pine nuts to the pot and continue to sauté for an additional 2-3 minutes, or until the nuts are golden brown.

Combine Ingredients

Stir in the rinsed rice, salt, and allspice. Mix well to combine.

Add Water and Cook

Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is cooked and the water is absorbed.

Fluff and Garnish

Remove from heat and let sit, covered, for 5 minutes. Fluff the rice with a fork and mix in the chopped parsley before serving.
