Prepare the Cheese

Soak the ackawi cheese in water for a few hours to remove excess salt. Drain and crumble the cheese.

Make the Syrup

In a saucepan, combine sugar and water. Bring to a boil, then reduce heat and simmer for about 10 minutes. Remove from heat and stir in the rose water. Let it cool.

Prepare the Phyllo Dough

Melt the unsalted butter. In a large bowl, mix the shredded phyllo dough with the melted butter, ensuring all strands are well-coated.

Assemble the Knafeh

Preheat the oven to 180°C (350°F). In a greased baking dish, layer half of the buttered phyllo dough at the bottom. Spread the crumbled ackawi cheese evenly on top, then cover with the remaining phyllo dough. Press down gently to compact.

Bake

Bake in the preheated oven for about 30-35 minutes or until the top is golden brown.

Finishing Touches

Remove from the oven and immediately pour the cooled rose syrup evenly over the hot knafeh. Allow it to soak for a few minutes.

Serve

Garnish with crushed pistachios before serving. Cut into squares and enjoy warm.
