    Prepare Bulgur

    In a large mixing bowl, combine the bulgur wheat and hot water. Cover and let it sit for about 30 minutes until the bulgur absorbs the water and becomes fluffy.

    Sauté Vegetables

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the chopped Swiss chard and cook until wilted. Remove from heat and let cool.

    Mix Kibbeh Dough

    Once the bulgur is ready, add the pumpkin puree, sautéed vegetables, chopped walnuts, ground cinnamon, ground cumin, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

    Shape Kibbeh

    With wet hands, take a small portion of the mixture and shape it into oval or round patties. Repeat until all the mixture is used.

    Cook Kibbeh

    In the same skillet, add the remaining olive oil and heat over medium-high heat. Fry the kibbeh patties in batches until golden brown on both sides, approximately 3-4 minutes per side.

    Serve

    Transfer the cooked kibbeh to a serving plate. Serve warm with yogurt or a side salad.
