Prepare the Potatoes
Peel the Russet potatoes and cut them into thin strips, about 1/4 inch thick.

Soak the Potatoes
Place the potato strips in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

Dry the Potatoes
Drain the water and pat the potato strips dry with a clean towel to remove moisture.

Heat the Oil
In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the potato strips in batches to the hot oil. Fry for about 4-5 minutes until they are golden brown and crispy.

Remove the fries from the oil and drain them on paper towels. While still hot, sprinkle with salt to taste.
