    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Scrub the russet potatoes under cold water and dry them. Prick the potatoes with a fork several times.

    Bake the Potatoes

    Place the pricked potatoes directly on the oven rack and bake for about 45-60 minutes, or until tender. Remove from the oven and let cool slightly.

    Cook the Bacon

    While the potatoes are baking, cook the Applewood smoked bacon in a skillet over medium heat until crispy. Remove and drain on paper towels, then crumble into small pieces.

    Prepare the Skins

    Once the potatoes are cool enough to handle, cut each potato in half lengthwise. Scoop out some of the flesh, leaving about 1/4 inch of potato on the skin.

    Season and Fill

    Brush the insides of the potato skins with olive oil and sprinkle with salt and black pepper. Fill each skin with the crumbled bacon and top with cheddar jack cheese.

    Bake the Skins Again

    Place the filled potato skins back in the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Serve

    Remove from the oven and let cool for a few minutes. Serve warm with sour cream and sprinkle with chopped chives on top.
