Preparation

  1. 1

    Make the Crust

Preheat the oven to 350°F (175°C). In a bowl, mix together the graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 8-10 minutes until set. Remove from the oven and let cool.

  2. 2

    Prepare the Filling

In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in the sugar, sour cream, and vanilla extract. Mix until combined. Add the eggs one at a time, mixing on low speed until just incorporated.

  3. 3

    Combine and Bake

Pour the cream cheese mixture over the cooled crust in the springform pan. Bake for 50-60 minutes or until the center is set and only slightly wobbly. Turn off the oven and let the cheesecake cool inside for 1 hour.

  4. 4

    Chill and Serve

Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight. Before serving, top with fresh raspberries, strawberries, blueberries, and drizzle with chocolate sauce.
