    Prepare the Southwest Sauce

    In a small bowl, mix together mayonnaise, chipotle sauce, lime juice, garlic powder, cumin, and smoked paprika. Set aside.

    Cook the Home Fries

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes, paprika, salt, and pepper. Cook until golden brown and crispy, about 15-20 minutes, stirring occasionally.

    Scramble the Eggs

    In a medium bowl, whisk together the eggs and milk. In another skillet, heat 1 tablespoon of olive oil over medium heat. Add diced bell pepper, onion, and jalapeño (if using). Sauté until soft, about 3-4 minutes. Add the egg mixture, salt, and pepper. Cook until eggs are just set, stirring occasionally.

    Assemble the Burritos

    Lay out a flour tortilla and place a portion of the scrambled eggs in the center. Top with cheddar jack cheese and a drizzle of southwest sauce. Fold the tortilla sides over the filling, then roll it up tightly.

    Preheat the oven to 375°F (190°C). Place the assembled burritos seam-side down on a baking sheet. Bake for 10-15 minutes, until the tortillas are golden and crispy.
