    Prepare the Home Fries

    Dice potatoes and boil until tender. Drain and sauté in a skillet with olive oil, salt, and pepper until crispy.

    Prepare the Hollandaise Sauce

    In a double boiler, whisk together egg yolks, lemon juice, and water. Slowly drizzle in melted butter while whisking until the sauce thickens. Season with salt and cayenne pepper.

    Poach the Eggs

    Bring a pot of water to a simmer. Add a splash of vinegar. Crack each egg into a small bowl and gently slide into the water. Cook for 3-4 minutes or until whites are set.

    Assemble the Eggs Benedict

    Split the English muffins and toast them. Layer each half with Canadian bacon or ham, then a poached egg, and top with Hollandaise sauce.

    For a vegetarian option, substitute the meat with smashed avocado and fresh spinach on the toasted muffin halves.
