Bacon Cheesy Fries Recipe

Preparation

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into evenly sized fries, about 1/4 inch thick.

    Soak the Fries

    Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Drain and pat dry the soaked fries. Carefully add them to the hot oil in batches and fry until golden brown and crispy, about 5-7 minutes per batch.

    Season the Fries

    Remove fries from the oil and drain on paper towels. While still hot, season with salt and black pepper.

    Add Cheese and Bacon

    Transfer the fries to a serving dish. Sprinkle the shredded cheddar jack cheese and crumbled bacon generously over the fries.

    Melt the Cheese

    Place the loaded fries under a broiler for 2-3 minutes, or until the cheese is melted and bubbly.

    Serve immediately with 2 oz of sour cream or ranch dressing on the side.
