Preparing the Calamari

Soak the Calamari
In a bowl, combine the calamari rings with buttermilk. Allow to soak for at least 30 minutes to tenderize the calamari.

Prepare the Breading
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder until well combined.
Frying the Calamari

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Bread the Calamari
Remove the calamari from the buttermilk and allow excess to drip off. Dredge each ring in the flour mixture, ensuring they are fully coated.

Fry the Calamari
Carefully place the breaded calamari into the hot oil. Fry in batches to avoid overcrowding. Cook for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Making the Marinara Sauce

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, oregano, salt, and black pepper. Simmer for 15 minutes, stirring occasionally.

Finally, stir in the fresh basil just before serving. Remove from heat.

Serve the crispy calamari hot, accompanied by the marinara sauce for dipping.
