Preparing the Wings

Prepare the Chicken Wings
Rinse the chicken wings under cold water and pat them dry with paper towels.

Season the Wings
In a large bowl, mix together the salt, black pepper, garlic powder, cayenne pepper, and paprika. Add the chicken wings and toss until they are evenly coated with the seasoning.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 375°F (190°C).

Fry the Wings
Carefully add the seasoned chicken wings to the hot oil, frying in batches if necessary to avoid overcrowding. Fry for about 10-12 minutes, or until the wings are golden brown and crispy.

Using a slotted spoon, remove the wings from the oil and place them on a paper towel-lined plate to drain excess oil.

In a large bowl, combine the fried wings with the buffalo sauce, tossing until they are evenly coated.

In a mixing bowl, whisk together the mayonnaise, sour cream, buttermilk, blue cheese crumbles, garlic powder, and lemon juice until well combined.

Add salt and black pepper to taste, adjusting as necessary.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
