Pâté Preparation

    Preheat Oven

    Preheat your oven to 180°C (350°F).

    Mix the Ingredients

    In a large mixing bowl, combine the ground pork shoulder, ground fatback, chopped onion, minced garlic, chopped prunes, Armagnac, thyme, bay leaf, salt, black pepper, and eggs. If using, add the chopped pistachios.

    Form the Pâté

    Mix everything thoroughly until well combined. Transfer the mixture to a loaf pan or terrine mold, pressing it down to avoid air pockets.

    Bake

    Cover the pâté with foil and place it in the preheated oven. Bake for about 1 hour, or until the internal temperature reaches 70°C (160°F).

    Cool and Refrigerate

    Remove the pâté from the oven, let it cool to room temperature, then refrigerate for at least 4 hours or overnight for better flavor.

Toast Preparation

    Prepare the Toasts

    While the pâté is chilling, prepare the toasts. Preheat a skillet or grill pan over medium heat.

    Butter and Toast

    Spread softened butter on each slice of baguette. Toast the slices in the skillet until golden brown on both sides.
