Method

Steak Preparation

  1. 1

    Marinate the Steak

In a bowl, combine olive oil, minced garlic, rosemary, salt, and black pepper. Rub this mixture all over the striploin steaks and let them marinate for at least 30 minutes.

  2. 2

    Cook the Steak

Preheat a grill or skillet over medium-high heat. Cook the marinated striploin steaks for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest.

Shallot Sauce Preparation

  1. 3

    Make the Sauce

In a saucepan, sauté chopped shallots in butter until translucent. Add red wine, beef broth, and thyme. Simmer until reduced by half. Season with salt and pepper to taste.

Frites Preparation

  1. 4

    Prepare the Frites

Peel and cut potatoes into thin strips. Rinse and dry thoroughly. Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Fry the potatoes in batches until golden and crispy, about 4-5 minutes. Drain on paper towels and season with salt.

Mixed Greens Preparation

  1. 5

    Toss the Greens

In a large bowl, combine mixed greens, olive oil, balsamic vinegar, salt, and pepper. Toss gently to coat.
