Tart Preparation

Prepare the Tart Crust
In a large bowl, combine the all-purpose flour and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs. Stir in the cold water, a tablespoon at a time, until the dough comes together. Shape into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Cook the Leeks and Mushrooms
In a large skillet over medium heat, melt a tablespoon of butter. Add the leeks and cook until softened, about 5 minutes. Add the garlic and mushrooms, and cook until the mushrooms are tender and all moisture has evaporated, about 8-10 minutes. Season with salt, pepper, and thyme. Remove from heat and let cool slightly.

Prepare the Filling
In a mixing bowl, whisk together the eggs, heavy cream, and grated Parmesan cheese. Stir in the cooled leek and mushroom mixture. Adjust seasoning if necessary.

Assemble the Tart
Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface to fit a 9-inch tart pan. Place the dough in the pan and trim the edges. Pour the filling into the crust, spreading it evenly.

Bake the Tart
Bake in the preheated oven for 30-35 minutes, or until the filling is set and the top is lightly golden. Let cool for a few minutes before slicing.
