    Prepare the Dough

    In a large mixing bowl, combine the bread flour, whole wheat flour, rye flour, and salt. Mix well. In a separate bowl, mix the water, sourdough starter, and honey until combined. Gradually add the wet mixture to the dry ingredients, mixing until a rough dough forms.

    Kneading

    Transfer the dough onto a floured surface and knead for about 10 minutes until smooth and elastic. Add the mixed seeds during the last few minutes of kneading.

    First Rise

    Place the kneaded dough in a lightly greased bowl, cover with a damp cloth, and let it rise at room temperature for 4-6 hours, or until doubled in size.

    Shape the Loaves

    Once risen, punch down the dough and divide it into 2 equal portions. Shape each portion into a loaf and place them into greased bread pans.

    Second Rise

    Cover the loaves with a damp cloth and let them rise for another 1-2 hours until puffed.

    Preheat the Oven

    Preheat your oven to 450°F (232°C).

    Bake the Bread

    Place the loaves in the preheated oven and bake for 30-35 minutes, or until golden brown and hollow sounding when tapped on the bottom.

    Cool

    Remove the loaves from the oven and let them cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
