Tarte Preparation

    Make the Tarte Base

    In a large bowl, mix the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the cold water until the dough comes together. Wrap in plastic wrap and refrigerate for at least 30 minutes.

    Caramelize the Onions

    In a skillet, heat olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes. Set aside.

Assemble and Bake

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Roll Out the Dough

    On a lightly floured surface, roll out the chilled dough to fit a tart pan. Press it into the pan and trim any excess.

    Layer the Filling

    Spread the caramelized onions evenly over the tart base. Layer the sliced potatoes on top, followed by the Emmental, Brie, and Raclette cheeses. Season with black pepper and fresh thyme if using.

    Bake the Tarte

    Bake in the preheated oven for about 45-50 minutes, or until the potatoes are tender and the cheese is golden and bubbling.

    In a large bowl, combine mixed greens, olive oil, balsamic vinegar, salt, and pepper. Toss gently to combine.
