Method
Making the Pasta
- 1
Prepare the Dough
In a large bowl, combine the flour and make a well in the center. Crack the eggs into the well and mix with a fork until combined. Knead the dough for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
- 2
Roll and Cut the Pasta
After resting, divide the dough into four pieces. Roll each piece out with a pasta machine or rolling pin to your desired thickness. Cut into tagliatelle strips and dust with flour to prevent sticking.
Cooking the Seafood and Sauce
- 3
Cook the Seafood
In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the scallops, shrimp, and mussels; cook for about 3-5 minutes until seafood is cooked through and mussels are open.
- 4
Add Wine and Lemon
Pour in the white wine and lemon juice, and season with salt and pepper. Allow to simmer for another 3-4 minutes.
Combining and Serving
- 5
Combine Pasta and Sauce
In a large pot of boiling salted water, cook the tagliatelle for about 2-3 minutes until al dente. Drain and add to the skillet with the seafood. Toss to combine and heat through.
- 6
Garnish and Serve
Garnish with fresh parsley before serving. Enjoy your handmade tagliatelle with scallops, shrimp, and mussels!
