Medialunas Preparation
1. Prepare the Dough
In a bowl, dissolve the yeast and sugar in warm milk. Let it sit until frothy, about 5-10 minutes. In a large mixing bowl, combine flour and salt. Add the yeast mixture, melted butter, eggs, and vanilla. Mix until a dough forms.
2. Knead and Rise
Knead the dough on a floured surface for about 10 minutes until smooth. Place in a greased bowl, cover, and let rise in a warm area until doubled in size, about 1-2 hours.
3. Shape the Pastries
Roll out the dough into a rectangle, about 1/4 inch thick. Cut into triangles and roll them into a crescent shape. Place on baking sheets lined with parchment paper.

5. Make the Dough
In a mixing bowl, cream the butter and sugar until light and fluffy. Add egg yolks and vanilla, mixing well. Gradually add flour and cornstarch until a dough forms.
6. Chill the Dough
Wrap the dough in plastic wrap and chill in the refrigerator for at least 1 hour.
7. Shape and Bake
Preheat the oven to 350°F (175°C). Roll out the dough to 1/8 inch thick and cut into circles. Place on a baking sheet and bake for 10-12 minutes until lightly golden.
8. Fill and Coat
Once cooled, spread dulce de leche on one cookie and sandwich with another. Roll the edges in shredded coconut.
