Cheese Preparation

Make the Crème Fraîche
In a bowl, combine heavy cream and buttermilk. Stir well, cover, and let sit at room temperature for 12-24 hours until thickened.

Prepare the Mozzarella
Hand-pull the mozzarella into bite-sized pieces and fold it gently into the crème fraîche. Set aside.
Grapes and Radicchio Preparation

Pickle the Radicchio
Slice radicchio into quarters and marinate in a mixture of white wine vinegar, honey, and salt for at least 30 minutes.
Assembly

Toast the Walnuts
In a dry skillet over medium heat, toast the walnuts for about 5 minutes until golden and fragrant. Remove from heat.

Plate the Dish
On a serving plate, spoon the mozzarella and crème fraîche mixture. Arrange grilled grapes, pickled radicchio, and toasted walnuts around it. Drizzle with olive oil and serve.
