    Make the Polenta

    In a saucepan, bring the water to a boil. Stir in the cornmeal and salt, reducing heat to low. Cook while stirring for about 5-7 minutes until thickened. Pour into a greased dish and let cool.

    Chop the avocado and tomato. In a bowl, mix the avocado, tomato, feta cheese, cilantro, olive oil, lime juice, and season with black pepper and cumin.

    Cook the Eggs

    In a skillet, heat a little olive oil and fry or scramble the eggs to your liking.

    Slice the cooled polenta into squares. Top each square with the avocado-tomato mixture and a fried or scrambled egg. Serve warm and enjoy your South American-inspired brunch!
