Method

Preparing the Mussels

    Clean the Mussels

    Rinse the mussels under cold running water, scrubbing the shells with a brush to remove any debris. Remove beards if present.

    Cook the Broth

    In a large pot, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

    Add Liquids

    Pour in the white wine, seafood fumé, and tomato sauce. Stir well and bring to a simmer.

    Add Mussels

    Add the cleaned mussels to the pot and cover with a lid. Cook for about 5-7 minutes, or until mussels have opened. Discard any mussels that remain closed.

    Finish the Broth

    Stir in the sliced olives, chopped parsley, salt, and black pepper. Adjust seasoning to taste.

Grilling the Bread

    Prepare the Bread

    Slice the baguette or French bread into thick slices. Brush each slice lightly with olive oil.

    Grill the Bread

    Place the bread slices on a grill or grill pan over medium heat. Grill for 2-3 minutes on each side until golden and toasted.

    Serve the mussels in a bowl with the broth and accompany with grilled bread on the side for dipping.
