Activate Yeast
In a small bowl, combine warm water, yeast, and granulated sugar. Let it sit for about 5-10 minutes until frothy.

In a large bowl, whisk together the flour and salt.

Make a well in the center of the flour mixture. Add the activated yeast mixture and warm milk into the well. Mix until a dough forms.

Transfer the dough to a floured surface and knead for about 10 minutes until smooth. Place in a greased bowl, cover, and let rise for 1-2 hours until doubled in size.

Place the cold butter between two sheets of parchment paper and roll it into a rectangle about 1/2 inch thick. Chill in the refrigerator.

Shape the Medialunas
Roll out the laminated dough into a rectangle and cut it into triangles. Roll each triangle from the base to the tip and curve slightly to form a crescent shape.

Place the shaped medialunas on a baking sheet lined with parchment paper. Cover and let rise for about 30-45 minutes.
