Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, yeast, and granulated sugar. Let it sit for about 5-10 minutes until frothy.

    Mix Dry Ingredients

    In a large bowl, whisk together the flour and salt.

    Combine Ingredients

    Make a well in the center of the flour mixture. Add the activated yeast mixture and warm milk into the well. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 10 minutes until smooth. Place in a greased bowl, cover, and let rise for 1-2 hours until doubled in size.

Butter Layering

    Prepare Butter

    Place the cold butter between two sheets of parchment paper and roll it into a rectangle about 1/2 inch thick. Chill in the refrigerator.

    Laminate the Dough

    Roll the risen dough into a rectangle. Place the chilled butter in the center and fold the dough over to encase the butter. Roll out and fold into thirds. Repeat this process 2 more times, chilling the dough between folds.

Shaping and Baking

    Shape the Medialunas

    Roll out the laminated dough into a rectangle and cut it into triangles. Roll each triangle from the base to the tip and curve slightly to form a crescent shape.

    Final Rise

    Place the shaped medialunas on a baking sheet lined with parchment paper. Cover and let rise for about 30-45 minutes.

    Egg Wash and Sugar Topping

    Preheat the oven to 375°F (190°C). Brush the medialunas with beaten egg and sprinkle rock sugar on top.

    Bake

    Bake for 15-20 minutes until golden brown. Allow to cool slightly before serving.
