Rinse the baby sardines under cold water and remove any innards. Pat them dry with paper towels.

In a bowl, mix the all-purpose flour, cornstarch, salt, black pepper, and paprika together until well combined.

In a deep skillet or frying pan, heat the olive oil over medium-high heat until shimmering.

Dredge each cleaned sardine in the flour mixture, ensuring they are well-coated.
