Method

For the Burger

  1. 1

    Prepare the Capicola

Preheat a skillet over medium heat. Add the capicola slices and cook for 2-3 minutes on each side until crispy. Remove and set aside.

  2. 2

    Cook the Burger Patties

Form the ground beef into two patties, season with salt and pepper. Grill or pan-sear over medium-high heat for about 4-5 minutes per side for medium doneness. Top each patty with a slice of cremosso cheese during the last minute of cooking to melt.

  3. 3

    Assemble the Burger

On the bottom half of the brioche bun, layer the shredded lettuce, the cooked burger patty with melted cheese, capicola, garlic pickles, and jalapeño aïoli. Top with the other half of the bun.

For the Frites

  1. 4

    Prepare the Frites

Preheat your oven to 425°F (220°C). Cut the potatoes into thin strips. Toss the potato strips in a bowl with olive oil and salt.

  2. 5

    Bake the Frites

Spread the potato strips on a baking sheet in a single layer. Bake for 25-30 minutes, flipping halfway, until golden and crispy.
