Tomato Braise

Method

Preparing the Tomato Braise

    Sauté the Aromatics

    In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.

    Add Tomatoes

    Stir in the diced tomatoes, salt, black pepper, and fresh basil. Bring to a simmer and cook for about 15 minutes, allowing the flavors to meld.

Cooking the Salmon and Potatoes

    Boil the Potatoes

    While the tomato braise is cooking, peel and cut the Yukon Gold potatoes into quarters. Boil them in salted water until tender, about 15 minutes. Drain and toss with 2 tablespoons of olive oil, lemon juice, and chopped parsley.

    Cook the Salmon

    In a separate skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the salmon fillets with salt and pepper, then add them to the skillet. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

    Prepare the Broad Beans

    Blanch the broad beans in salted boiling water for about 2-3 minutes, then drain and set aside.

Plating

    On each plate, place a salmon fillet, a generous scoop of tomato braise, a serving of the Yukon Gold potatoes, and a portion of broad beans. Garnish with additional parsley if desired.
