    In a large bowl, cream together the softened butter and powdered sugar until light and fluffy. Add the egg yolks and vanilla extract, mixing well. Gradually add the all-purpose flour and cornstarch until the dough comes together.

    Wrap the dough in plastic wrap and refrigerate for at least 1 hour until firm.

    Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Roll out the chilled dough on a lightly floured surface to about 1/4 inch thickness. Cut out rounds using a cookie cutter and place them on the prepared baking sheet.

    Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Allow to cool completely.

Assembly

    Fill the Cookies

    Spread a generous amount of dulce de leche on the flat side of one cookie, then sprinkle with shredded coconut. Top with another cookie, flat side down, to form a sandwich.

    Dust with Powdered Sugar

    Dust the assembled alfajores with powdered sugar before serving.
